
My Tourlou Tourlou recipe …must try to roll Rs…means everything all mixed up. This is my go-to vegan and or vegetarian dish. It’s so sweet and delicious from the long baking and the layering of flavors. My kids always ask, “what’s that delicious smell?” And they eat it!
2-3 potatoes, I like golden
3 small to medium zucchini
1 large eggplant or 2 small ones
Can or box or diced tomatoes, a large one
Freshly grated tomatoes if you have, I like to keep these in the freezer
1 tbs tomato paste
Olive oil. Use as you like
Garlic chopped
Onion chopped
Dill
Cumin
Salt and pepper
I like to chop the veggies in medium to large cubes and then toss it all in a baking dish or pan…all mixed up. That’s it. Cover with foil and bake 45 minutes at 375. Take foil off and add water as needed and more spices as needed, stir and bake another hour, stirring and adding bits of water if necessary. I like to sprinkle a bit more cumin on a few times. I love fresh dill too, but save that for the last half hour and can use dried dill weed.
Sometimes I add chickpeas into the mix. Serve with fresh extra virgin olive oil drizzled over it. Some folks crumble feta cheese on top, but the sheep’s milk kind, not that cow milk stuff. 🙂 oh and fresh dill on top is lovely too.
